"...would God make Eve?" and "...didn't God just make another Adam..."

Legend has it that Eve *wasn't* the first woman, Lilith was.

Lilith was a female form made from dirt [just like Adam]; she took one look at Adam after being told she had to subordinate to him, said "I'm outta here", and preferred the demons [fallen angels] -- guess they at least were treating her as an equal.

Adam cried/whined, God didn't want to make the same mistake twice, took a rib from Adam, and formed that into a female for him. Starting millennia of 'justified' rights denial due to gender differences.
