I don't have any first-hand knowledge of the topic, but various sources online suggest breeding horses for the right temperament, then gradually acclimating them to noises and other distractions over time (presumably starting small and far away, then getting louder and closer). On a related note, despite the common fantasy trope of a mounted knight charging a dragon, Corec and the knights didn't bring their warhorses on the expedition against the dragon because there's no realistic way to gradually acclimate horses to running toward a dragon. Dragons aren't common enough, and the horses will probably die the first time they try it (if not from the dragon, then from fleeing in terror). Even if some horses get used to Risingwind's presence, no one's going to risk a valuable horse by charging toward him for practice.
